A rice dish for two with a whole clawed lobster. We brown the lobster first and return it to the casserole halfway through cooking so it does not overcook. The rest of the flavour comes from the sofrito, cuttlefish, the lobster’s own coral and a good fish stock.
At home, this is rice for special occasions. We bring the casserole straight to the centre of the table, leave it to rest for a few minutes and serve it while it is still moist and creamy.

Before you start
If you make the fish stock at home, boil the fish bones for 30 minutes with the vegetables, bay leaf and oil. We sauté the prawn heads first to give it more flavour and colour. If you do not have time, buy a good brand of ready-made stock.
You can ask the fishmonger to cut up the lobster. If you cut it at home, split it in half with a sharp knife and make a cut in the claws so the meat is easier to remove later.
Have everything ready before starting: once the rice starts cooking, everything moves very quickly.

The lobster is browned at the start and returned to the casserole halfway through cooking: this way it takes on the flavour of the rice without overcooking.
