St Stephen's Day Cannelloni

Marina's recipe

Marina discovered these in Barcelona, where she lived for eleven years. There, they are always made for St Stephen's Day, 26 December, using meat from the Christmas stews, as the family gathers once again. She started making them when her family would travel from Madrid to Barcelona for Christmas. They have been a yearly tradition ever since. Even when we spend Christmas away, she makes them anyway: one year she took them from Madrid to Córdoba, and the whole family enjoyed them. She makes plenty, so there are enough for the following days too.

A tip from our kitchen

The secret is in the meat: a flavourful stew with tomatoes, well-softened onions and plenty of seasoning. And a smooth, light, well-seasoned béchamel.
