Sicilian Caponata

A recipe from the Sicilian side of the family

Caponata came into our kitchen through the Sicilian side of the family. It's a dish of fried aubergine with celery, olives, capers and tomatoes, finished with a sweet-and-sour mixture of vinegar and sugar. Enjoy it at room temperature, or cold the next day, when it tastes even better.

For the sweet-and-sour mixture

In Sicily, local green olives such as Nocellara del Belice are used, with their slightly bitter, salty flavour. Here, manzanilla olives are the closest match.

A tip from our kitchen

Fry the aubergine in batches so it doesn't absorb too much oil, cooking it until golden and tender, then drain well.
