Fideuá came into our home by way of Barcelona. One day Marina took Teresa out for fideuá at a place she knew, and when Teresa tried it with thin noodles, she loved it: ‘It’s as though the noodles soak up so much flavour.’ We have made it that way ever since.
It is our recipe for festive days, when the family gets together. Teresa loves rice, but fideuá, especially with monkfish and prawns, is one of her favourite dishes to make.

The most important thing is that the ingredients, especially the shellfish, are fresh and good quality.
Use a paella pan or a shallow non-stick casserole: you toast the noodles and cook the fideuá in it.
There is always twice as much stock as noodles. This is an approximate measure, so it is best to have a little extra in case it is needed.
