Andalusian Gazpacho

Well chilled, with its chopped garnish

Recipe by Grandma Encarna and Teresa

Gazpacho brings back many childhood memories for Teresa, from when her mother, Grandma Encarna, used to make it. In her family, they have always had gazpacho or salmorejo (a thick, chilled tomato soup) in summer, and she almost prefers gazpacho, because the cucumber makes it refreshing.

A tip from our kitchen

Don't skimp on the oil, and the tomatoes have to be good: all the flavour depends on them. If the tomatoes aren't ripe, leave them out of the fridge for a few days, never inside. And remove the green shoot from the garlic so it doesn't repeat on you. Add the water little by little. It's better after a few hours in the fridge, and even tastier the next day.

Also in the book… variations without bread or with rolled oats, or with heirloom tomatoes; served as a starter with croutons, jamón ibérico (Iberian cured ham) or hard-boiled egg, or in a glass as a refreshing drink. Gazpacho existed before tomatoes arrived in Europe: bread, oil, garlic, vinegar and water.
