Migas come from Teresa’s side of the family. They used to make them in winter when they went out to eat in the countryside, and her mother, Grandma Encarna, made them at home and served them with green peppers.
Making migas in winter, when the family gets together, is a real celebration.

All the accompaniments are fried separately and served separately. If they are fried with the migas, the migas become very oily. Only the garlic and peppers are fried in that oil. And the sardines never go into the pan with the migas, because they dry out.
