Turkey in Escabeche

Teresa's recipe

Teresa started making this when her children were teenagers: they would come home hungry and help themselves to a few slices of turkey in escabeche. Some of her daughter's friends still remember it. Turkey can be quite dry, but the oil, herbs and vinegar give it a lovely flavour. Kept in its oil in the fridge, it's ready to enjoy over the next few days.

A tip from our kitchen

Don't throw away the oil: it's what preserves the turkey.

Safety note

Always keep it in the fridge, tightly covered and with the slices submerged; use a clean fork to take them out. Official guidance for cooked meat is to keep it for no more than 4 days (USDA). Because of the escabeche, we keep it for up to 10 days at home, but the recommendation is to follow the official guidance and freeze any leftovers. If its smell or appearance changes, throw it away.
