A wonderfully rewarding recipe that Teresa has often made for her children: children love roast chicken with potatoes. The potatoes soak up all the flavour of the marinade and the chicken.
The important thing is to buy a good chicken. Teresa buys free-range birds: they cost a little more, but you can really taste the difference.

Before you start
Choose a grain-fed, free-range chicken: corn-fed birds are more yellow, while wheat-fed birds are paler.
If you have time, let the chicken sit in the marinade for a couple of hours before roasting, but leave out the potatoes, as they will darken.
