It's the best-known Italian pasta sauce in the world, and the one we use for our ragù lasagne. We like it with a fine texture and a gentle flavour, and the key to that is the meat: it needs to be fresh and minced just once.

Before you start
Ask your butcher to mince the meat in front of you. Once through the mincer is enough.
If you don't have celery, you can leave it out, although a classic ragù soffritto uses all three vegetables.
Allow plenty of time: the longer it cooks, the tastier it will be.
