Creamy Prawn and Asparagus Risotto

Marina's recipe

Marina started making this risotto in Barcelona. With just two main ingredients, prawns and asparagus, it turns out wonderfully flavourful, and it's very easy to make too. That's exactly why both ingredients need to be good. Asparagus makes all the difference when it's in season, in spring. And for the prawns, fresh white prawns are best: a good size, from the fishmonger, the kind you can "peel in a second". Frozen peeled prawns just don't taste the same.

A tip from our kitchen

Let the onion soften thoroughly so it doesn't stay raw, and sauté the asparagus well so the oil carries all those flavours into the rice.
