Pork Tenderloin with Mushrooms in Cider

Teresa's recipe

A wonderfully simple, quick recipe. In autumn, fresh mushrooms are best if you can find them; otherwise, it's delicious with dried mushrooms soaked in water beforehand, or with button mushrooms. Teresa especially likes it with portobellos, which have a deeper flavour. Teresa draws plenty of inspiration from her family, especially her mother, as well as from Karlos Arguiñano's easy, flavourful recipes.

A tip from our kitchen

Just sear the meat at first: frying it for too long will overcook it, as it finishes cooking in the sauce.
