Tagliatelle with pork cheek ragù

Marina's recipe

A ragù made with Iberian pork cheeks, a wonderfully juicy and tender cut. You can also make it with beef cheeks. We use a pressure cooker, but a regular pot works just as well—it simply takes longer. It's the kind of comforting cheek stew we make at home, served over fresh Italian pasta.

A tip from our kitchen

Brown the cheeks well before braising them, and use a wine you'd happily drink at the table.
